Simple Cucumber Tomato Salad

This simple Cucumber Tomato Salad is best in the height of summer when the produce is fresh! Tomatoes, cucumbers, feta, and basil are tossed with a fresh avocado dressing.

Ingredients
  

  • 2 cups Cherry tomatoes, halved
  • 2-3 English, Persian, or Japanese cucumbers, cut into thin half-moons
  • 1/4-1/2 cup feta cheese, crumbled
  • 1 recipe Avocado Dressing
  • Sea salt and freshly ground black pepper to taste

Instructions
 

Combine tomatoes, cucumbers, and feta in a large mixing bowl.

  • Toss with dressing or plate the salad and drizzle the dressing on top.

Season to taste with sea salt and freshly ground black pepper.

    Cucumber Tomato Salad Tips and Tricks
    Follow some tips and tricks below to get the most out of this simple salad. 
    Use Ripe, In-Season Tomatoes: For maximum sweetness.
    Cut Tomatoes in Half Lengthwise: When cutting cherry tomatoes, you want to try to keep the seed and juice inside and not gush out into the salad. To do this, you need to cut the tomatoes in half lengthwise from the top to the bottom. Refer to How to Cut Tomatoes for proper instructions.
    Choose English or Persian Cucumbers: For better crunch, with less seeds. 
    Salt Cucumbers First: To remove excess moisture and intensify flavor. If you want your cucumber to be extra crispy and flavorful, you can chop the cucumber ahead of time and toss it with salt. The salt will help draw out excess moisture from the cucumber, making it sweeter and more crisp. In doing this, you can also save time by doing one step ahead of time. 
    Let Salad Sit For 10 minutes:  To blend flavors.
    Make Dressing in Advance: I always love to have several salad dressing made in my refrigerator so I can throw together yummy salads in minutes.
    How to Store
    This salad is best eaten fresh but can be stored in the refrigerator in an airtight container for up to 2 days. Avoid freezing, as cucumbers lose their crisp texture when thawed.
