It's sweet with just the right amount of fire to be your "go-to" margarita for the entire summer! It also pairs wonderfully with my Super Charged Guacamole and Mango Bell Pepper Salsa.   • We’re getting the weekend started a little earlier today! Did you know, Dragon fruit, (also known as Pitaya), is a sweet, bright, and exotic looking Central/South America fruit that contains heaps of vitamins and antioxidants. It is high in fiber, iron, and vitamin C and B. It aids in digestions, reduces cholesterol, and supports better brain activity. So basically, drinking this margarita will make you smarter:)
Dragon Fruit Jalapeno Margarita ingredients.

There are three main varieties of the fruit being:

  • Pitaya Blanca: pink skin, white flesh, and black seeds.
  • Pitaya Roja: pink skin, red pulp, and black seeds.
  • Pitaya Amarilla: yellow skin, white flesh, and black seeds.
  • You can buy the pulp frozen in your supermarket, and it’s usually a vibrant pink color. This vibrant pink is the pulp of the Pitaya Roja.
  • Whether fresh or frozen, try experimenting with different varieties and make and enjoy this margarita for its nutrients and beauty!

Dragon Fruit Jalapeño Margarita

These are my favorite margaritas to make! They have sweet, spice, and everything nice to put some “pep-in my-step” at any summer bash or soiree! So, what are you waiting for…plug in the blender and crack open the tequila for these beauties!

Ingredients
  

Margarita

  • 1 dragon fruit, rough outer skin removed and chopped
  • 1 batch Palm Sugar-Jalapeño Simple Syrup
  • ¼ cup fresh lime juice for blender, plus 1 lime juiced for rim
  • 2 oz Reposado tequila

Palm Sugar-Jalapeño Simple Syrup

  • ¾ cup water
  • 2 tbsp palm sugar
  • ½ jalapeño, sliced

Spicy Salted Rim

  • 1 tbsp sea salt
  • 1 tbsp palm sugar
  • 1 tbsp chili powder

Instructions
 

Margarita

  • Add ingredients to a blender filled with ice. Pulse until smooth.
  • Dip glass into lime juice and then roll it in the spiced salt.
  • Fill glass with fresh ice and pour blended margarita over ice.
  • Garnish: Spiced Salted Rim Mixture, Lime Wheel, Dragon Fruit Slice, Jalapeño Slices in glass.

Palm Sugar-Jalapeño Simple Syrup

  • Pour water into a saucepan over high heat.
  • Add palm sugar and jalapeño.
  • Allow mixture to come to a boil and then turnoff heat. Let me mixture infuse and cool for 20 minutes.
  • Strain mixture to eliminate seeds. Reserve.

Spicy Salted Rim Ingredients

  • Mix ingredients together and reserve for rim.
