Cinco Veggie Spread: Super Charged Guacamole and Mango Bell Pepper Salsa

It’s incredible how you can fill up on veggies and not even realize that you forgot the chips!

  • Guacamole: I love punching up my guacamole by making it crunchier and more colorful. It gives the dip extra texture in every bite and is so pleasing on the eye.
  • Mango Salsa: The sweetness of the mango is such a delight with the pairing of Bell pepper, the bite of jalapeño and red onion, and freshness of the lime. It’s more colorful and exotic than a traditional tomato salsa and will have your guests craving more!

Creating this large spread is so easy, as you can use any vegetables that you have on hand.

In mine I LOVE:

  • Jicama: This is known as a Mexican turnip. It’s perfect for dipping when you peel off the skin and slice into batons. It’s sweet, nutty, and has a crisp texture.
  • Radish: I sliced these into rounds, as they are an excellent vehicle for every spicy bite.
  • Bell Pepper: These are superb when cut into strips. They are colorful and have just the right amount of sweetness.
  • Cucumber: I used Japanese cucumber and sliced them on a bias. However, any cucumber will do:) You could use English, Persian, or any garden variety. Make sure you cut them thick enough to hold their form, so they will not bend when you use them to dip.
  • Cherry Tomatoes: These are so easy you don’t even need to cut them! Just put out a bowl of varied colors, and let the seeds explode in your mouth with every bite.
  • Carrots: I love the beauty of sliced long garden carrots with a bit of the stem attached. I usually do not peel them, as most of the nutrients are in the skin. Just wash them thoroughly and slice them in half.

Ingredients
  

Super Charged Guacamole

  • 3 avocados, mashed
  • 1 jalapeño, minced
  • ½ cup cherry tomatoes, chopped
  • ¼ cup red onion, minced
  • 2 scallions, diced
  • 2 limes, juiced

Mango Bell Pepper Salsa

  • 1 mango, peeled and diced
  • ¼ cup red onion, chopped
  • 1 red Bell peppers, chopped
  • 1 jalepeño, minced
  • ¼ cup cilantro, chopped
  • 1 lime, juiced

Instructions
 

Super Charged Guacamole

  • Combine all ingredients. Season to taste with salt.

Mango Bell Pepper Salsa

  • Combine all ingredients. Season to taste with salt.
