Vital Elements to Delicious Banana Bread:
- The riper your bananas, the richer the flavor in your bread.
- The addition of a soft dairy cheese or yogurt adds the perfect amount of body to this bread giving it a luxurious texture. In this recipe, I opted for Mascarpone cheese. However, Greek yogurt, sour cream, crème fraîche, or cream cheese will all work.
- I always opt for dark brown or golden-brown sugar over white for flavor.
- This recipe has an added amount of sexiness with a sprinkling of brown sugar/butter on top. This is entirely optional:)
- Mix your dry ingredients to distribute the ingredients evenly.
- Beat the 1 cup brown sugar, Mascarpone, white miso, and butter until light and fluffy.
NOTE: With the addition of miso, this mixture appears to look “broken” and slightly clumpy. That is okay; keep going:)
- Add in the eggs on at a time on low speed just until combined.
- Mash the bananas separately and hand fold them into your mixture.
- Hand fold in the flour in batches as well.
- You DO NOT want to overmix this batter, or your bread will become dense.
- Pour the batter into your prepared loaf pan.
- Lightly bang the dish once or twice on the countertop to evenly distribute.
- Combine the remaining two tablespoons of brown sugar with the remaining two tablespoons butter until you form a soft paste.
- Dollop this mixture on top of the bread for extra sweet goodness:)
- Bake the bread until the top is golden brown, and when you insert a knife, toothpick, or cake tester, it comes out clean, around 50-60 minutes.
- Serve with additional Mascarpone cheese or warmed butter.

This banana bread pulls out "all the stops" with Mascarpone, dark brown sugar, sweet white miso, and an additional sugary buttered topping! It is decadent, moist, and has just the right level of sweetness to pass for breakfast, snack, or dessert when served warm with vanilla ice cream. The unusual addition of sweet white miso adds extra moisture and flavor that becomes its secret ingredient.

Ingredients
- 1 ¾ cups all-purpose flour
- 1 ¼ tsp baking soda
- ¾ tsp salt
- 1 cup dark brown sugar plus 2 tablespoons
- ½ cup Mascarpone
- ¼ cup sweet white miso

Instructions

- Using a stand mixer with the paddle attachment, mix the 1 cup brown sugar, Mascarpone, white miso, and butter until light and fluffy.
- Add in the eggs one at a time on a low speed.
- Take the mixture out of the mixer and hand fold in the bananas.
- In batches, hand fold in the flour mixture as well.
- Pour the batter into your prepared loaf pan.
- In a separate small bowl, combine the remaining two tablespoons brown sugar with the two tablespoons butter until you form a soft paste.
- Dollop this mixture on top of the bread.
- Bake the bread until the top is golden brown, and when you insert a knife, toothpick, or cake tester, it comes out clean, around 50-60 minutes.
