Feta (PDO): Choose a block for bold, tangy flavor and a creamy blend. Greek PDO feta in brine is creamiest; a block not in brine (like the Whole Foods brand I use) also works. Avoid pre-crumbled feta. If the block seems extra dry, add 1โ€“2 tsp water or a splash of pepper lacquer.

Fresh Mint: Brightens and balances; parsley or dill also work.
